Tried specific -s “X”, and --no-subtitles => mkv file stubbornly holds onto the subtitles. I also tried handbrake, with export to mp4 and clearing the subtitles - still no good. VLC with Subtitles-Disable still shows them. Any idea on how I could get rid of them?!?

Well, if you cannot even turn them off in the player, then chances are they’re hardcoded-subtitles (hardsubbed) — meaning they’re encoded into the video & cannot be removed at all.
