My task is simple: Load a BluRay image and remove unnececarry audio. I cannot open a Blu-Ray folder. Why did the program I’ve been using for years behave differently and lose access to important functions?

You can either open the index.bdmv file in the BDMV directory or any of the .mpls playlist files in the BDMV\PLAYLIST sub-directory.
Keep in mind that MKVToolNix only supports unencrypted discs. It cannot break or remove copy protection.
